ever read any carl sagan? you should try dragons of eden. its a fairly simple read by a total genius, about the evolution of the human mind and such. still, it's not REAL philosophical so to speak.

Kant's 'Critic of Pure Reason' is pretty deep. Of course its very long winded and I found it dull (had to study it)
But hey, Kant's the symbol of philosophical depth.

Oh I just remembered an easy-read pilosophical book : God's Debris by Scott Adams (Dilbert writer).
Very flowy, quite funny and simply easy if mind-twisting.

Right now im reading "Conciense Explained" by: Dennit

Book is about the human conciense and how people percieve conciense. What is conciense made up of? Can other animals think? Why are we the only species that think?

Stuff like that. I find it interesting, since i found that monkeys laugh, while reading this book.
